Instructions
- Heat olive oil in a medium skillet over medium heat. Add the sliced onion and cook for 3-4 minutes until soft.
- Season chicken thighs with salt and pepper. Add to the skillet with onions, cover, and cook for about 10 minutes until chicken reaches an internal temperature of 165°F.
- Shred the chicken using two forks directly in the skillet, then mix in BBQ sauce until well coated. Top with shredded cheese, cover, and let sit for 1-2 minutes to melt the cheese.
