  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 4 large russet potatoes
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for about 40–45 minutes until it reaches an internal temperature of 160°F (71°C).
  4. While baking, scrub and pierce potatoes; bake until tender (about 45 minutes) or microwave for quicker cooking (8–10 minutes).
  5. Once cooked, scoop potato insides into a bowl and mix with butter, sour cream, cheddar cheese, green onions, salt, and pepper.
  6. Stuff the potato skins with the mixture and top with extra cheese. Bake again for 5–10 minutes until melted.
  7. Serve slices of meatloaf alongside loaded potatoes.
