- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 1 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 4 large russet potatoes
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper. Mix until just combined.
- Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for about 40–45 minutes until it reaches an internal temperature of 160°F (71°C).
- While baking, scrub and pierce potatoes; bake until tender (about 45 minutes) or microwave for quicker cooking (8–10 minutes).
- Once cooked, scoop potato insides into a bowl and mix with butter, sour cream, cheddar cheese, green onions, salt, and pepper.
- Stuff the potato skins with the mixture and top with extra cheese. Bake again for 5–10 minutes until melted.
- Serve slices of meatloaf alongside loaded potatoes.
