- 1 cup flaked coconut
- 3/4 cup sliced almonds
- 1 cup almond flour
- 1 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup butter softened
- 1/4 cup Swerve Sweetener
- 1/4 cup Brown Swerve
- 1 large egg
- 1/2 tsp vanilla
- 3/4 cup (1 1/2 sticks) butter, softened
- 2 cups powdered Swerve
- 1 teaspoon pure vanilla extract
- 1 tablespoon heavy whipping cream
Instructions
- In a food processor, combine flaked coconut, sliced almonds, almond flour, coconut flour, baking powder, cinnamon, and salt. Pulse until well combined. The mixture should resemble 'oatmeal flakes.'
- In a large bowl, beat the softened butter with Swerve Sweetener and Brown Swerve until creamy.
- Add in the large egg and vanilla extract to the butter mixture. Beat until everything is well integrated.
- Pour in the coconut-almond mixture from your food processor. Continue beating until fully combined into a dough.
- Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 30 minutes to firm up.
- Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
- After chilling, roll out the dough to about 1/3 inch thick. Use a round cookie cutter to cut out uniform shapes. Place them onto your prepared baking sheet.
- Bake in the preheated oven for about 12-15 minutes until golden brown around the edges. Let cool on the pan for about ten minutes.
- In another large bowl, beat remaining softened butter on medium-high speed for about three minutes until light and fluffy.
- Turn down speed to low; gradually add in powdered Swerve until fully incorporated.
- Add vanilla extract and heavy cream; mix until combined. Increase speed back to medium-high for another three to five minutes until fluffy.
- To assemble your Keto 'Oatmeal' Creme Pies, pipe or spread cream filling on half of the cookie's flat side. Top with remaining cookies.
