Instructions

  2. In a heavy-bottomed saucepan, combine sugar, cream, corn syrup, and salt. Cook over medium heat while stirring until the sugar dissolves.
  3. Attach a candy thermometer and cook without stirring until it reaches 260°F (127°C).
  4. Carefully pour the hot mixture onto the prepared surface and let cool for about 10-15 minutes.
  5. Butter your hands well, then pull and fold the cooled candy until it lightens in color (about 10-15 minutes).
  6. Shape into ropes about ½-inch thick using buttered scissors to cut into bite-sized pieces.
  7. Place on wax paper to firm up at room temperature.
