- 2 cups granulated sugar
- 1 cup heavy cream
- ½ cup light corn syrup
- ⅛ teaspoon salt
- 1 teaspoon vanilla extract
- Butter (for greasing hands and surface)
Instructions
- Generously butter a marble slab or large baking sheet. Set aside extra butter for your hands and scissors.
- In a heavy-bottomed saucepan, combine sugar, cream, corn syrup, and salt. Cook over medium heat while stirring until the sugar dissolves.
- Attach a candy thermometer and cook without stirring until it reaches 260°F (127°C).
- Carefully pour the hot mixture onto the prepared surface and let cool for about 10-15 minutes.
- Butter your hands well, then pull and fold the cooled candy until it lightens in color (about 10-15 minutes).
- Shape into ropes about ½-inch thick using buttered scissors to cut into bite-sized pieces.
- Place on wax paper to firm up at room temperature.
