Ingredients
- 2 lbs lean ground beef
- 1 onion
- 2 garlic cloves (minced)
- 2 tsp paprika
- 2 tsp sumac
- ½ tsp black pepper
- Pinch of saffron (less than ¼ tsp)
- Olive oil or butter for grilling
Instructions
- Grate the onion and drain excess moisture using a fine mesh sieve.
- In a large bowl, mix the ground beef, drained onion, garlic, paprika, sumac, salt, pepper, turmeric, and saffron.
- Refrigerate the mixture for at least 2 hours to firm up.
- Form the meat mixture onto flat skewers.
- Grill over high heat until charred and cooked through, brushing with saffron-infused butter towards the end.
- Serve with saffron rice and grilled vegetables.
