Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Wash and chop strawberries; pat dry to remove excess moisture.
- In a bowl, whisk together flour and baking powder.
- In another bowl, cream softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla until combined. Gradually add the dry ingredients and fold in the strawberries.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart.
- Bake for 12-15 minutes or until edges are golden. Let cool on wire racks before serving.
