- 1 cup fresh strawberries, sliced
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup buttermilk
- 3 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Wash and slice the strawberries; toss them with a little sugar if desired.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla.
- In another bowl, mix flour, baking powder, and salt. Alternately add this mixture and buttermilk to the creamed mixture, starting and ending with flour.
- Gently fold in the strawberries and pour batter into the prepared pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
