Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, sour cream, vegetable oil, vanilla extract, lemon juice, and lemon zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
- Transfer the batter to the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack. Drizzle with a simple glaze made from powdered sugar mixed with lemon juice.
