- 2 lbs boneless, skinless chicken thighs
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese (divided)
- 1 cup low-sodium chicken broth
- 8 oz cream cheese
- 2 tsp Italian seasoning
- 6 soft sandwich rolls
Instructions
- Place the chicken thighs in the slow cooker and season with salt, pepper, and Italian seasoning.
- In a bowl, mix minced garlic, chicken broth, cream cheese, and half of the parmesan until smooth; pour over the chicken.
- Cover and cook on low for 6 hours.
- Shred the chicken in the slow cooker and stir to coat in the sauce.
- Serve on sandwich rolls topped with remaining parmesan.
