- 4 boneless, skinless chicken breasts (about 1.5 lbs)

- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and prepare a large baking sheet.
- Season chicken breasts with salt and pepper on both sides.
- Chop bell peppers and zucchini into bite-sized pieces; add to the baking sheet with cherry tomatoes.
- In a bowl, whisk together balsamic vinegar, honey, and oregano.
- Place seasoned chicken on the baking sheet among the veggies; drizzle sauce over everything.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve hot.
