- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) instant yeast
- 3/4 cup warm milk (110°F)
- 2 tbsp unsalted butter (melted)
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup custard powder
- Powdered sugar (for dusting)
Instructions
- In a large bowl, combine flour, sugar, yeast, warm milk, melted butter, eggs, and vanilla extract. Mix until sticky dough forms.
- Knead dough on a floured surface for about 10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover it with plastic wrap or a damp cloth, and let it rise in a warm area until doubled in size (about 1 hour).
- While the dough rises, prepare the custard filling according to package instructions by whisking custard powder with sugar and milk until thickened. Add a splash of vanilla extract and let cool.
- Once risen, punch down the dough and roll it out to about half an inch thick. Cut into circles using a cookie cutter.
- Place about a teaspoon of cooled custard in the center of each circle; fold over another circle on top and pinch edges firmly to seal.
- Heat vegetable oil in a deep pot to 350°F (175°C). Fry bomboloni for about two minutes on each side until golden brown. Drain on paper towels and dust with powdered sugar while warm.
