- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh basil leaves, finely chopped
- 4 garlic cloves, minced
- 1 cup panko breadcrumbs
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Place chicken breasts between plastic wrap and pound to about ½ inch thickness.
- In a bowl, combine chopped basil and minced garlic.
- Season chicken with salt and pepper. Dip each breast in olive oil, then coat with the panko-basil-garlic mixture.
- Arrange coated cutlets on a parchment-lined baking sheet and bake for 20 minutes or until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Serve hot, garnished with fresh basil if desired.
