- 1 lb lean ground turkey
- 1 cup bell peppers (sliced)
- 1 cup broccoli florets
- 1 cup carrots (thinly sliced)
- 3 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp cornstarch
- 2 tsp sesame oil
Instructions
- Prepare ingredients by chopping vegetables and mincing garlic and ginger.
- In a small bowl, whisk together soy sauce, honey, ginger, garlic, and cornstarch until smooth.
- Heat a large skillet over medium-high heat; add sesame oil and ground turkey. Cook until browned (about 5 minutes).
- Add bell peppers, broccoli, and carrots to the skillet; stir-fry for about 3-4 minutes until vegetables are slightly tender.
- Pour in the teriyaki sauce; stir to coat everything evenly and cook for an additional 2 minutes.
- Serve hot over rice or quinoa, garnished with sesame seeds if desired.
