- 1 lb lean ground chicken
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella cheese, torn into chunks

- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
- Add ground chicken, season with salt and pepper, and cook until no longer pink (6-8 minutes).
- Stir in cherry tomatoes and basil; cook for an additional 3 minutes.
- Transfer mixture to baking dish, top with mozzarella, and drizzle with balsamic vinegar.
- Bake for about 20 minutes until cheese is bubbly and golden brown.
