Instructions
- Wash and core the apples, then dice into bite-sized pieces. Drizzle with lemon juice to prevent browning.
- Toast the walnuts in a dry skillet over medium heat until golden brown and fragrant (about 5 minutes).
- In a bowl, combine Greek yogurt, honey, cinnamon, and an additional splash of lemon juice; whisk until smooth.
- In a large bowl, mix diced apples and toasted walnuts. Pour the creamy dressing over the top and gently fold to coat evenly.
- Cover and chill in the fridge for at least 30 minutes before serving.
