- 1 cup crushed dark chocolate cookies
- 4 tbsp unsalted butter, softened
- 2 tbsp granulated sugar
- 1/2 cup heavy cream
- 1 cup dark chocolate chips (60% cacao)
- 1/2 cup salted caramel sauce (store-bought or homemade)
- Sea salt flakes for garnish
Instructions
- 1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed cookies, butter, and sugar until crumbly. Press into tartlet pans and bake for 10 minutes.
- 2. Heat heavy cream in a saucepan until simmering. Remove from heat, add chocolate chips, and stir until melted and smooth.
- 3. Fold half of the salted caramel sauce into the chocolate mixture until combined.
- 4. Fill each tart shell three-quarters full with the chocolate-caramel filling.
- 5. Allow to cool at room temperature before refrigerating for at least one hour to set.
- 6. Before serving, drizzle with remaining caramel sauce and sprinkle with sea salt.
