Instructions
- Cook the tortellini according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat.
- Add taco seasoning to the beef, mixing thoroughly.
- Stir in enchilada sauce; let simmer for 3-5 minutes.
- Gently fold in cooked tortellini and heat through for an additional minute.
- Top with shredded cheese, cover, and allow it to melt for 2-3 minutes.
- Serve hot with a dollop of sour cream and sprinkle with cilantro.
