Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, and cinnamon.
- In another bowl, mix the egg, oil, vanilla extract, and grated carrots until well combined.
- Pour the wet mixture into the dry ingredients and fold gently. Add nuts if using.
- Scoop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 12-15 minutes until golden brown around the edges. Let cool before transferring to wire racks.
