Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs with melted butter until crumbly. Press into the bottom of a springform pan and bake for 10 minutes until golden.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and eggs one at a time until blended.
  3. Stir in ground cinnamon and fold in diced apples gently.
  4. Pour filling over the baked crust and bake for about 50-60 minutes or until set but slightly jiggly in the center.
  5. Cool at room temperature, then refrigerate for at least four hours or overnight.
  6. Remove from pan and drizzle with caramel sauce before slicing.
