Instructions

- Season the salmon fillets with salt and pepper, placing them skin-side down in the dish.
- In a bowl, whisk together honey, balsamic vinegar, Dijon mustard, and olive oil; add diced peaches if desired.
- Arrange peach slices around the salmon and pour the glaze over everything.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork and peaches are caramelized.
- Serve hot, drizzling any remaining glaze over each plate.
