- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp blackening seasoning
- 8 corn or flour tortillas
- 1 ripe mango, diced
- 2 ripe avocados, diced
- Juice of 1 lime
- ¼ cup fresh cilantro, chopped
Instructions
- Preheat your grill or skillet over medium-high heat.
- Pat chicken breasts dry and coat them generously with blackening seasoning.
- Add oil to the hot grill or skillet, then cook the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
- While the chicken cooks, mix diced mango, avocado, cilantro, and lime juice in a bowl.
- Warm tortillas in another pan for about one minute on each side.
- Slice the cooked chicken and layer it onto tortillas. Top with mango avocado salsa and serve immediately.
