Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Toss the cubed sweet potatoes with olive oil, garlic powder, salt, and pepper until well-coated. Spread them evenly in the baking dish.
- Roast sweet potatoes for 25-30 minutes or until tender.
- Season chicken with salt, pepper, and olive oil. In a bowl, mix BBQ sauce, apple cider vinegar, and honey.
- Grill chicken for about 6-7 minutes per side or bake alongside sweet potatoes for 25-30 minutes until cooked through.
- Assemble bowls by topping roasted sweet potatoes with sliced BBQ chicken and drizzle with extra sauce.
