Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In another bowl, beat softened butter and sugar until light and fluffy using a hand mixer or stand mixer.
- Add eggs one at a time, mixing well after each addition. Then add lemon juice, zest, and optional lemon extract.
- Gradually mix dry ingredients into the wet mixture until just combined—do not overmix!
- Pour the batter into the prepared pan and bake for 25-30 minutes or until golden brown on top. Cool slightly before cutting into squares.
