- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup chopped toasted pecans
- ½ cup light brown sugar
- ⅓ cup corn syrup
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of a springform pan to form the crust.
- In a bowl, beat softened cream cheese until smooth. Gradually add sour cream, sugar, eggs, and vanilla until well combined.
- Pour the filling over the crust and bake for about 45 minutes until set around edges but slightly jiggly in center. Cool slightly.
- In a saucepan over low heat, combine pecans, brown sugar, corn syrup; stir until bubbly. Pour over the cheesecake.
- Bake for an additional 10-15 minutes until topping is golden brown. Chill for at least four hours before serving.
