- 1 box (15.25 oz) chocolate cake mix
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 cups fresh cherries, pitted and halved
- 1 cup heavy whipping cream, cold
- ½ cup unsweetened cocoa powder, sifted
- 1 cup powdered sugar (for topping)
- 1 tbsp agar-agar powder
Instructions
- Preheat the oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper. Prepare the chocolate cake mix as per package instructions and bake for 25–30 minutes until a toothpick comes out clean.
- In a mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, then mix in heavy whipping cream until fluffy.
- Once the cakes cool, assemble by placing one layer on a platter. Spread half of the cheesecake filling over it and top with half of the cherries. Add the second layer and spread the remaining cheesecake filling on top. Refrigerate for one hour.
- For the cherry topping, heat pitted cherries with powdered sugar until juices release. Mix agar-agar powder with water as per instructions and stir into the cherry mixture until slightly thickened.
- Pour cherry topping over chilled cheesecake and whip remaining heavy cream with powdered sugar until stiff peaks form; pipe or spread on top as desired.
