- 2 lbs chicken tenders or thighs (cut into 2-3" pieces)
- 1 tbsp lemon pepper seasoning
- 1 tbsp paprika
- 4 garlic cloves (minced)
- Juice and zest of 1 lemon
- 8 oz salted butter (slightly melted)
- 2–3 tbsp olive oil
- Hot sauce to taste
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine chicken pieces with lemon pepper seasoning, paprika, minced garlic, lemon juice and zest, hot sauce, salt, and olive oil. Mix until well coated. Let marinate for at least 30 minutes.
- Prepare the butter mixture by mixing melted butter with additional seasonings (cracked pepper, paprika, garlic powder) in a small bowl.
- Skewer the marinated chicken tightly on wooden skewers.
- Preheat air fryer to 400°F (200°C). Spray basket with nonstick spray. Cook skewers in batches for about 15 minutes total: cook for 5 minutes, baste with butter mixture, flip, baste again, and cook until internal temperature reaches 165°F.
- Baste one final time before serving over rice or with roasted vegetables.
