Instructions
- Preheat your oven to 375°F (190°C).
- Bake un-pierced sweet potatoes on a baking sheet for 40-45 minutes until soft. Cool before handling.
- Peel, core, and slice the apples; drizzle with lemon juice to prevent browning.
- Remove the skin from cooled sweet potatoes and slice them into 1/2-inch thick rounds.
- In a baking dish, layer apple slices and sweet potato slices alternately.
- In a small saucepan over low heat, melt honey, butter, cinnamon, and vanilla until combined.
- Pour the honey mixture over the layered fruit and vegetable slices in the baking dish; sprinkle with toasted pecans if desired.
- Bake at 350°F (175°C) for about 15-20 minutes until heated through.
