- 1–2 sprigs fresh thyme
Instructions
- Heat olive oil in a large pot over medium heat and sauté finely chopped onion until golden brown.
- Add chopped tomatoes and cook until they are mushy, stirring occasionally.
- Mix in chopped green bell pepper, zucchini, carrots, and celery; stir for 5 minutes.
- Incorporate tomato paste and fresh thyme; cook for an additional 2 minutes.
- Pour in about 2 liters of water, cover partially, and simmer for 1 hour.
- Use an immersion blender to achieve a creamy consistency.
- Serve hot with your choice of toppings like croutons or fresh herbs.
