Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a mixing bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, combine egg, honey, Greek yogurt, milk, oil, and vanilla extract until smooth.
- Add the dry ingredients to the wet mixture; stir gently until just combined.
- Fold in the diced peaches until evenly distributed.
- Fill each muffin cup about ¾ full with batter.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for about 5 minutes before transferring to a wire rack.
