Instructions
- In a mixing bowl, combine red onion, olive oil, balsamic vinegar, salt, and pepper; set aside.
- Chop tomatoes and mix with minced garlic and basil; add to the onion mixture.
- Preheat grill to medium-high heat and oil the grates.
- Season salmon fillets with salt and pepper; grill skin-side down for 8-10 minutes until cooked through.
- Let salmon rest covered for 2-3 minutes before serving.
- Top each fillet with the bruschetta mixture and enjoy.
