  • 6 boneless skinless chicken breasts or thighs
  • 5 tablespoons oil
  • Juice of 4 limes
  • 2 green onions
  • 4 habanero chilies
  • 4 teaspoons minced garlic
  • 1 tablespoon fresh thyme
  • ½ teaspoon ground ginger
  • 1 tablespoon brown sugar
  • ½ teaspoon ground allspice
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a food processor, blend oil, lime juice, green onions, habanero chilies, garlic, thyme, ginger, brown sugar, allspice, salt, and pepper until smooth. Reserve ¼ cup for later use.
  2. Marinate the chicken in the remaining mixture inside a large resealable bag for at least 3 hours (up to 8 hours).
  3. Preheat grill to medium heat. Remove chicken from marinade and discard excess.
  4. Grill chicken for about 5-6 minutes per side. Brush reserved marinade during the last few minutes of cooking.
  5. Garnish with chopped parsley and serve immediately.
