- 6 boneless skinless chicken breasts or thighs
- 5 tablespoons oil
- Juice of 4 limes
- 2 green onions
- 4 habanero chilies
- 4 teaspoons minced garlic
- 1 tablespoon fresh thyme
- ½ teaspoon ground ginger
- 1 tablespoon brown sugar
- ½ teaspoon ground allspice
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a food processor, blend oil, lime juice, green onions, habanero chilies, garlic, thyme, ginger, brown sugar, allspice, salt, and pepper until smooth. Reserve ¼ cup for later use.
- Marinate the chicken in the remaining mixture inside a large resealable bag for at least 3 hours (up to 8 hours).
- Preheat grill to medium heat. Remove chicken from marinade and discard excess.
- Grill chicken for about 5-6 minutes per side. Brush reserved marinade during the last few minutes of cooking.
- Garnish with chopped parsley and serve immediately.
