Instructions
- Marinate the chicken by mixing olive oil, minced garlic, herbs, smoked paprika, salt, pepper, and lemon juice. Coat the chicken evenly and let it sit for at least 15 minutes.
- Boil cubed potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter and milk until creamy. Season to taste.
- Grill marinated chicken on medium-high heat for 5-6 minutes per side or until fully cooked (165°F / 74°C).
- For the salad, toss chopped lettuce and tomatoes in a bowl with olive oil and lemon juice. Season to taste.
- Serve grilled chicken alongside mashed potatoes and fresh salad.
