- 1 chicken breast, sliced

- Salt & pepper, to taste
- 1 cup cooked rice (brown or white)
- 1 cup corn kernels
- 1 cup green beans, chopped
- 1 tsp soy sauce or additional olive oil
- 1 cup broccoli florets
- 1 cup cauliflower florets
Instructions
- Preheat oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder. Roast for 20-25 minutes until tender.
- Season chicken slices with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for 5-6 minutes per side until golden brown.
- In a pan over medium heat, sauté corn and green beans in oil or soy sauce. Add cooked rice and stir until heated through.
- Serve grilled chicken alongside veggie rice and roasted vegetables on a plate.
