  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Juice of 1/2 lime

  • Salt & pepper to taste
  • 1/2 tsp smoked paprika
  • 1/4 small red onion, thinly sliced

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, smoked paprika, and salt; spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill over medium heat for 6-7 minutes per side until cooked through.
  4. Mash avocado with lime juice in a bowl; season with salt and pepper for guacamole.
  5. Combine halved cherry tomatoes, diced avocado, thinly sliced red onion, olive oil, salt, and pepper in another bowl for the salad.
  6. Assemble by layering sweet potato fries at the bottom of each bowl topped with sliced grilled chicken, guacamole, and tomato-avocado salad.
