- 1 large chicken breast
- 2 medium sweet potatoes
- 1 ripe avocado
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- Juice of 1/2 lime
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1/2 tsp smoked paprika
- 1/4 small red onion, thinly sliced
Instructions
- Preheat your oven to 200C (400F).
- Toss sweet potato wedges in olive oil, smoked paprika, and salt; spread on a baking sheet and bake for 20-25 minutes until crispy.
- Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill over medium heat for 6-7 minutes per side until cooked through.
- Mash avocado with lime juice in a bowl; season with salt and pepper for guacamole.
- Combine halved cherry tomatoes, diced avocado, thinly sliced red onion, olive oil, salt, and pepper in another bowl for the salad.
- Assemble by layering sweet potato fries at the bottom of each bowl topped with sliced grilled chicken, guacamole, and tomato-avocado salad.
