Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, coat chicken drumsticks with olive oil, garlic, paprika, oregano, thyme, salt, and pepper.
- In another bowl, toss diced potatoes and optional red bell peppers with olive oil, paprika, salt, and pepper.
- Arrange seasoned chicken on top of the potatoes in a baking dish.
- Roast uncovered for about 55 minutes until the chicken is golden brown and crispy, basting occasionally.
- Serve hot and enjoy!
