Instructions
- Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
- In a mixing bowl, whisk together milk and eggs until combined.
- Add panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper; mix until just combined.
- Sauté minced garlic in olive oil until fragrant; then stir into the mixture with chopped parsley.
- Gently fold in the ground chicken until well combined.
- Shape the mixture into a loaf in the prepared pan.
- Prepare the garlic butter topping by mixing melted butter with garlic powder; brush over the meatloaf.
- Pour chicken broth around the loaf in the pan for moisture.
- Bake for 60-70 minutes, or until an internal temperature of 165°F (74°C) is reached.
- Let rest for 10-15 minutes before slicing and serving.
