Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts in this marinade.
  3. On a large baking sheet, spread halved baby potatoes and drizzle with olive oil; season with salt and pepper.
  4. Place marinated chicken on top of the potatoes.
  5. Roast for 20 minutes; then add trimmed green beans tossed in olive oil, salt, and pepper.
  6. Return to the oven and roast for an additional 20 minutes until chicken reaches an internal temperature of 165°F (74°C) and potatoes are fork-tender.
