Ingredients
- 1 lb boneless skinless chicken breasts or thighs
- 12 oz bowtie pasta (farfalle)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 4 oz cream cheese, softened
- 1 cup Velveeta, cubed
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tbsp butter (for searing)
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- Chopped parsley, for garnish
Instructions
- Boil salted water in a large pot and cook bowtie pasta until al dente (10-11 minutes). Drain and set aside.
- In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and sear until golden brown (6-8 minutes). Remove and keep warm.
- In the same skillet, melt butter and sauté garlic for 30 seconds. Add heavy cream and milk, whisking in cream cheese until smooth. Stir in cheeses until melted.
- Toss cooked pasta with the sauce in the skillet. If thickened too much, add a splash of reserved pasta water.
- Plate the pasta alongside the chicken, garnish with parsley, and serve hot.
