- 4 eggs
- 1 cup diced zucchini
- 1 cup chopped red bell pepper
- 1 cup diced onion
- 2 tbsp crumbled feta or goat cheese
- Salt & pepper to taste
- 1 tsp olive oil
- 1 slice whole grain bread
- Ripe avocado
- Everything bagel seasoning (or salt, pepper, chili flakes)
- ½ cup sliced strawberries
- ½ cup blueberries
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat and sauté zucchini, onion, and bell pepper for about 3-4 minutes.
- Whisk the eggs with salt and pepper in a mixing bowl until combined. Pour over sautéed vegetables. Sprinkle cheese on top.
- Bake for 12-15 minutes until set. Let cool before slicing.
- Toast the whole grain bread; mash avocado and spread it on the toast. Season as desired.
- Serve one slice of frittata alongside avocado toast and garnish with fresh berries.
