Instructions
- In a bowl, whisk together flour, sugar, baking powder, salt.
- In another bowl, combine milk, egg, vanilla extract, and melted butter.
- Mix wet ingredients into dry ingredients until just combined; fold in diced peaches.
- Heat vegetable oil in a deep skillet to 350°F (175°C).
- Drop spoonfuls of batter into hot oil; fry until golden brown (2–3 minutes per side).
- Remove fritters and let drain on paper towels.
- Prepare glaze by whisking powdered sugar with milk and vanilla until smooth; drizzle over warm fritters.
