Instructions
- Prepare the pastry cream by heating milk and whisking together egg yolks and sugar. Combine and cook until thickened; refrigerate.
- Make the tart dough by creaming butter and sugar, adding egg, vanilla, salt, flour, and baking powder. Chill the dough.
- Blind-bake the crust at 350°F until golden brown; cool completely.
- Fill the cooled crust with chilled pastry cream and top with fresh fruit arranged beautifully. Brush with melted apricot jam for shine.
