- 1 cup bell peppers (mixed colors)
- 1 medium zucchini, sliced
- 1 medium red onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Prepare your ingredients by washing and slicing the vegetables.
- In a large skillet over medium-high heat, add olive oil and sauté the chopped onion until translucent (about 3 minutes).
- Add ground beef to the skillet; cook until browned (about 5 minutes), breaking it apart as it cooks.
- Mix in bell peppers, zucchini, and minced garlic; sauté for another 5-7 minutes until the veggies are tender.
- Season with salt, pepper, oregano, and lemon juice; toss well to combine.
- Serve hot with pita or rice.
