- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz Philadelphia cream cheese, softened
- ¾ cup granulated sugar
- 1 cup fresh blueberries
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 1 tbsp agar-agar mixed with 3 tbsp water
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan to form the crust.
- In a bowl, beat cream cheese and sugar until smooth. Mix in vanilla extract and lemon juice until well combined.
- Gently fold in fresh blueberries.
- Dissolve agar-agar in water according to package instructions; mix into the cream cheese mixture thoroughly.
- Pour the blueberry mixture over the crust; smooth the top with a spatula.
- Refrigerate for at least four hours or overnight until set.
