- 1 pound ground turkey
- 1 small sweet onion
- 1 cup shredded carrots
- 3 garlic cloves
- 1 small head cabbage (shredded)
- 3 tablespoons soy sauce or tamari
- 2 tablespoons olive oil
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the ground turkey for about 5–6 minutes until mostly cooked through.
- Push turkey to one side, add onion and remaining oil, cooking for 3–4 minutes. Stir in carrots, garlic, and ginger; cook for an additional 2 minutes.
- Add chicken broth, then stir in cabbage, soy sauce, rice vinegar, salt, and pepper. Cover and cook on medium-low for 12–15 minutes until cabbage is tender.
- Serve over cooked rice and top with green onions, sesame seeds, and optional sriracha mayo.
