Instructions
- Prepare the zucchini by tossing it with salt in a colander and letting it drain for about 10 minutes. Squeeze out excess moisture using a clean tea towel.
- In a mixing bowl, combine flour, beaten eggs, cheese, chives, salt, and pepper until smooth. Stir in the prepared zucchini until evenly mixed.
- Heat olive oil in a large skillet over medium-high heat. Drop spoonfuls of batter into the hot oil and flatten slightly with the back of a spoon. Fry for about 2 minutes on each side until golden brown.
