Ingredients
- 3 cups uncooked pasta
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 small red onion (chopped)
- 1/2 cup Kalamata olives
- 3 mini cucumbers (chopped)
- 1 cup halved little tomatoes
- 5 ounces crumbled feta
- Salt & pepper (to taste)
- 2 tablespoons red apple vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic (minced)
- 1 teaspoon fresh parsley (chopped)
- 1/2 teaspoon dried oregano
- 1 teaspoon (packed) brown sugar
Instructions
- Cook pasta in salted boiling water until al dente. Drain and rinse under cool water.
- In a jar, combine olive oil, red apple vinegar, Dijon mustard, minced garlic, brown sugar, parsley, oregano, salt, and pepper. Shake well to mix.
- In a large bowl, combine drained pasta with chopped vegetables and feta cheese. Pour dressing over the top and toss gently.
- Serve immediately or chill in the fridge for at least 30 minutes before serving to enhance flavors.
