  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup halved little tomatoes
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse under cool water.
  2. In a jar, combine olive oil, red apple vinegar, Dijon mustard, minced garlic, brown sugar, parsley, oregano, salt, and pepper. Shake well to mix.
  3. In a large bowl, combine drained pasta with chopped vegetables and feta cheese. Pour dressing over the top and toss gently.
  4. Serve immediately or chill in the fridge for at least 30 minutes before serving to enhance flavors.
