- 2 lb vine tomatoes (chopped)
- 1/2 cucumber (chopped)
- 1 red pepper (chopped)
- 1 shallot (finely chopped)
- 2 cloves garlic (finely chopped)
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Sea salt and pepper to taste
- Fresh basil (for garnish)
Instructions
- Prepare the tomatoes by blanching them: score the bottom, boil for 30 seconds, then plunge into ice water to peel easily. Chop the peeled tomatoes.
- In a large mixing bowl, combine the chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, sea salt, and pepper. Let sit for at least 20 minutes to meld flavors.
- Transfer the mixture to a blender and blend until smooth.
- Chill in the refrigerator for at least two hours before serving. Serve garnished with fresh basil.
