Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
- In another bowl, whisk together flour and baking powder. Gradually add the dry mixture to the wet ingredients until just combined.
- Scoop about two tablespoons of dough into each muffin cavity; press down in the center to create an indentation.
- Bake for 12-15 minutes or until golden brown around the edges.
- While cooling, sprinkle diced strawberries with sugar and let sit for five minutes.
- Fill cooled cookie cups with strawberry mixture before serving.
