Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season each chicken breast with salt and pepper.
- Place the seasoned chicken in the prepared baking dish and bake for 20-25 minutes until cooked through (165°F internal temperature).
- Remove from the oven and spread basil pesto over each chicken breast; top with mozzarella slices.
- Switch your oven to broil and return the dish for an additional 3-5 minutes until the cheese is bubbly and golden.
- Meanwhile, mix cherry tomatoes with olive oil, salt, pepper, and fresh basil in a bowl.
- Serve the chicken topped with bruschetta mixture and drizzle with balsamic glaze.
