- 8 large eggs

- 1 cup chopped cooked chicken breast
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, finely chopped
- 1 cup shredded cheese (your choice)

Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
- In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
- Sauté diced onion and bell peppers in a skillet over medium heat for about 5 minutes until soft.
- Combine sautéed veggies and chicken with the egg mixture, stirring gently.
- Fold in half of the shredded cheese and pour into the prepared baking dish. Sprinkle remaining cheese on top.
- Bake for 30-35 minutes or until set in the middle. Let cool slightly before slicing.
